Of course you can access exchange email through POP3 and SMTP, but these services may not be offered by the organisation hosting your email. If you are inside the network (ie. inside the building), then POP3 and SMTP would work fine, but from a remote location on the internet, the services would have to be published by the administrator, which is unusual these days, as RPC/HTTP is available instead, which is much faster and more secure.
I don't know of apple's mail clients supporting RPC/HTTP(S), but it would be worth checking, and if not, looking for 3rd party clients that do support it, as I am sure there are some out there!
